Mum's Bean Salad recipe (so I don't lose it!)

Best Bean Salad
WARNING: this is Mum's catering menu and feeds an army. Seriously! We're going to be eating bean salad for weeks!

Ingredients

2Kg Cooked Beans (Approx 1kg dry mix)
2 Onions
1 Cup diced celery
1 Green or red pepper
Carrots
Gherkins
Plenty of finely Chopped parsley

Sauce

1½ Cups Vinegar
2 Cups Sugar
½Cup Water
2 tsp Salt

Instructions

Soak beans overnight & cook 1– 1½ hrs until soft
When cool add everything bar sauce ingredients.
Boil together Vinegar, Sugar, Water & Salt.
When cool pour over beans, mix well & chill 24hrs before serving.
Add Black Pepper

  2. Hey Arfi - we ate this for nearly a week after I made it due my serious over-catering! But it is delicious - although I completely forgot to take a photo!
    Mum always emphasises that this gets better the longer you keep it.
